Looking for a delicious but healthy pancake recipe to start your day? Try this strawberry chocolate pancake. It’s well balanced with complex carbohydrates, protein, as well as healthy fats, so it will keep hunger minimized until lunch.

Ingredients

  • 1/3 cup oat bran
  • 1 scoop chocolate whey protein powder
  • ¼ cup egg whites
  • ½ cup sliced strawberries
  • 1 cup egg whites
  • ½ tsp. baking soda
  • 1 tbsp. unsweetened cocoa powder
  • 2 tbsp. plain low fat Greek yogurt
  • 2 tbsp. stevia
  • 4 tbsp. dried unsweetened coconut flakes

Directions

Mix together the oat bran, egg whites, baking soda, 1 tbsp. of the stevia and the cocoa powder. Stir in half of the sliced strawberries and 2 tbsp. coconut flakes.

Heat a skillet over medium heat and cook the mix like a standard pancake.

Meanwhile, combine the yogurt, 1 tbsp. stevia, and 2 tbsp. unsweetened coconut flakes. Serve this on top of the pancakes along with remaining sliced strawberries.

Recipe makes 2 servings.
